Fast & Easy No Bake Christmas Inspired Cookies

I was looking for a no-bake Christmas treat that we could do this Christmas season with my daughter who has Autism. This activity is part of her life skills activity that we do at home.

I found this "Easy Christmas Butter Cookies" recipe and thought this is the perfect Christmas kitchen activity to do with minimal and easily available ingredients. 


THE COOKIES, BAKE FROM SCRATCH OR STORE BOUGHT

The original recipe uses butter cookies, you bake it with 5 ingredients. Instead of baking the butter cookies from scratch, I decided to just buy some butter cookies from the supermarket and we just made the chocolate ganache and do the decorating with Christmas colored sprinkles. 



You can also bake it if you like or have time but if you don't have enough time you can just buy some cookies from the store. You can use any shape or type of butter cookies available in the supermarket. I choose the type as seen in the image above.

You can also try it with any type of cookies aside from the suggested butter cookies in the original recipe. Just choose those plain type of cookies that you can cover with some ganache and decorate with sprinkles.

MAKING THE CHOCOLATE GANACHE, NO MICROWAVE

To create the chocolate ganache, bittersweet chocolate was used in the original recipe. We used GOYA Dark Chocolate instead (I bought the 35 gram ones) since we cannot find any bittersweet chocolate in the supermarket here. We break the chocolate bar into smaller pieces then put them into a pan and add in all-purpose cream (you can use any brand), we use Magnolia All-Purpose Cream.


As suggested in the original recipe, you put this in the microwave but if you don't have a microwave you can do it on the stove like we did on low heat, keep stirring until the chocolate is fully melted, remove from heat immediately and continue stirring until you achieve a smooth and silky chocolate ganache. Transfer to a bowl and get ready to dip your cookies into it.

COVERING & DECORATING THE COOKIES

You can dip half of the cookies or cover the whole cookies with the chocolate ganache if you like. We prepare a plate lined with baking paper for the cookies after dipping and adding in some sprinkles. 


If you want your completed cookies a bit hard and crunchy you can also put in the fridge or in the freezer for about 20 to 30 minutes before serving or eating. If you don't like the chocolate ganache or cookies hard, you can just set it aside at room temperature until the chocolate is completely set.
