I was looking for a drink that I could try for my coming birthday along with some foods that I plan to do and prepare for a simple birthday meal I could create for myself. I was browsing for some recipes and come across this "cucumber juice" and I love cucumbers and never tried cucumber juice before so I did a search for some cucumber juice recipes and found this simple and easy to make Refreshing Cucumber Lemonade, you only need water, cucumbers, sugar and lemons to make it.

Instead of lemons, I used calamansi and I think this will also taste great by using lime or some other type of citrus fruits. I'm using these cucumbers with bigger and many seeds in them because that's the cucumber variety that is available here in our market. In this post, I will share my experience making this cucumber juice recipe.
SUBSTITUTING WITH CALAMANSI & THE RIGHT AMOUNT OF LEMON JUICE
The recipe suggest adding the juice of 6 lemons to the cucumber juice mixture. I doubled the recipe and juiced 24 pieces of calamansi fruit in place of lemon juice and it compliment and blended with the overall juice mixture very well not at all sour. You can use the juice of about 12 to 15 pieces calamansi in place of 6 lemons for a single recipe. If using lemons, start with the juice of about 1 or 2 lemons instead of 6 lemons for a single recipe and adjust as needed.

THE RIGHT SWEETNESS FOR THIS JUICE
To sweeten a single recipe of this Cucumber Juice, you will make a sugar syrup by combining 1/2 cup of sugar and 1 cup water and heating and dissolving them in a saucepan over medium heat. You may add an additional 1/2 cup water or a bit more to the whole juice mixture if you want to lighten the sweetness of the overall juice.

PREPARING THE CUCUMBERS
So I use the cucumber variety with big and large seeds in them for this juice. There is no need to peel the cucumbers because we want to have green colored juice, just make sure to wash the cucumbers thoroughly. I cut my cucumbers in half lengthwise then I cut each half again in half. Next, I scrape the seeds off with a knife then chop the cucumbers in large dice pieces.
PROCESSING THE CUCUMBERS
To crush the cucumbers for juicing, I use a small and simple food processor with a single blade that can crush & chop anything from ice, nuts, meat, fruits, vegetables, etc. into pieces. After straining cucumber pulp for 15 minutes, I additionally press the pulp against the strainer using the back of a spoon to extract more and extra cucumber juice from the pulp. Once all juice is extracted, it's time to mix all the ingredients (sugar syrup, cucumber juice and calamansi or any other citrus fruit you are using) together in a pitcher, you may add an additional 1/2 cup or a bit more water for a single recipe or 1 cup more water for a double recipe to lighten the sweetness of the overall juice mixture.

SERVING THE CUCUMBER JUICE
I double the recipe and it was able to fill and serve 4 small glasses. I add some ice cubes and some extra slices of calamansi and cucumbers as garnish to servings of this cucumber juice. Overall it's delicious, refreshing and a great cucumber juice to make anytime with minimal and simple ingredients. Try it today!
